Chickpea and Quinoa Veggie Burger

(Makes 6 patties)

Ingredients: 
  • 2 cups chickpeas
  • 1 cup cooked quinoa
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 1 small zucchini, chopped
  • basil, cilantro, parsley, whatever you like, a small handful
  • salt & pepper
  • 1 tsp paprika, cumin & chili powder 
  • 1/4 cup almond meal
  • 1/4 cup quinoa flakes 
  • 2 tbs olive oil 

Instructions: 
1.. Add zucchini, onion and garlic in a food processor until finely chopped.  
2. Add in chickpeas, herbs, spices, salt & pepper
3. Add the almond flour and quinoa
4. Pulse until all the ingredients are combined but still have texture. 
5. Pour mixture in a large bowl and add Tbsp of quinoa flakes if needed and mix well 
6. Form the mix into patties, using an ice cream scoop
7. Over medium-high heat, heat up olive oil in a sauté pan and gently add a patty 
8. Cook for 3-5 minutes on each side, adjust heat as necessary 
(Patties can also bee cooked in the oven at 425 degrees for 20-25 minutes)

Healthy Cookie Dough Balls

Ingredients: 

1 1/4 cup of almond flour
1/4 cup coconut butter
1/2 cup sugar of choice (coconut sugar, raw cane sugar etc.)
2 tbs oat milk or milk of choice
1/2 tsp of vanilla
1/4 cup chocolate chips
Instructions: 
mix butter and sugar
add oat milk and vanilla and stir
add flour
add chocolate chip
roll into any size ball
put in freezer, always refrigerate

​Ingredients


3½ cups of rolled oats

1 tbsp cinnamon
1¼ almond milk or milk of choice
1 cup of maple syrup
¾ cup of almond flour
4 cups of any fresh berries (blueberries, raspberries, strawberry)




Instructions

1. Preheat oven at 300°F
2. mix all ingredients together
3. scoop into cupcake pan
4. Bake for 40 minutes

Warm up with this easy & YUMMIE recipie


Ingredients: 

1 Baby yellow squash
Aprox ...20 Beans(you choose variety)
2 Tomato Spinach or kale
2 sticks celery chop small
1 Onion sliced Pepper (blk)
1 cup Coconut milk or water(you choose )


Instructions:

Bake squash 20 min in oven at 350 ,remove skin ,dice add into pot with coconut milk or water. In a separate pot cook beans in water for 15 minutes and drain water when cooked. Add beans to soup.
